What is Florida Cuisine?

Florida cuisine is a melting pot of distinct cultural influences from Europe, East Asia, and the Caribbean, combined with the rich (and deep-fried) tapestry of classic southern dining.

The end result is magnificent. Florida cuisine is drenched in fresh fish, barbeque, shrimp and grits, pizza, and crab. It’s a delicate balancing act of three specific cultural influences coming together in riveting and original ways. Florida cuisine adds the deep flavor palette of the Caribbean, the colors and varieties of Spain, and the fresh favorites of southern dining in selections like fried green tomatoes and conch fritters.

What are the top foods of St. Augustine you have to try?

You can see these influences all over when you walk down the historic streets of St. Augustine, and especially when you walk inside its many restaurants. We compiled a quick list of our three must-try dishes in St. Augustine.

Shrimp and Grits

The combination of the two makes for a dazzling display of freshness. It’s also a classic example of southern cuisine. Shrimp and Grits come with authentic creole dining, made all the better by its adaptability. Small adjustments to the formula make the dish perfect for any meal of the day.

Minorcan Clam Chowder

Sure, while the northeast owns the New England clam chowder, Florida’s delightful spin on the soup is equally amazing. Add clams, onions, bell peppers and tomatoes, and splash it all with some garlic and thyme, and you have the beginnings of a good minorcan. The soup derives from the Minorcans, who settled in the region around 1777 and gave us this fantastic and now classic dish.

Gator Tail

Gator Tail is “so Florida” that it is hard to imagine eating it anywhere else. Gator Tail is almost always deep-fried to perfection and served as a primer or appetizer. While sometimes being a little rough and chewy, a well-prepared gator tail is the ideal in-between of chicken and fish.

Florida has a slew of signature dishes not even covered here. Be sure to bite into as many as you can while staying at our beachside St. Augustine beach rentals.
